What you’ll need
- 4 boneless, skinless chicken thighs
- 2 cups cherry tomatoes
- 1 zucchini, sliced into half-moons
- 1 red bell pepper, chopped
- ½ cup pitted Kalamata olives
- 3 tablespoons olive oil
- 2 teaspoons dried oregano
- 2 cloves garlic, minced
- ½ cup crumbled feta
- Salt and pepper to taste
Method
Preheat the oven to 425°F (220°C). On a large sheet pan, toss the tomatoes, zucchini, and bell pepper with 2 tablespoons of olive oil, half the oregano, and a pinch of salt. Push the vegetables to the edges of the pan.
Pat the chicken thighs dry and rub with the remaining olive oil, oregano, minced garlic, salt, and pepper. Place them in the center of the pan.
Roast for 25–30 minutes, until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender and lightly charred at the edges.
Scatter the olives and feta over everything in the last 5 minutes of cooking, just long enough for the feta to soften slightly.
