Chia seeds absorb roughly ten times their weight in liquid, which is what turns a jar of seeds and milk into a pudding-like texture overnight with zero cooking. It’s one of the easiest make-ahead breakfasts to batch for a full week.

Basic ratio

  • 3 tablespoons chia seeds
  • 1 cup milk of choice (dairy or plant-based)
  • 1 teaspoon maple syrup or honey (optional)
  • ½ teaspoon vanilla extract

Method

Combine all ingredients in a jar and stir well — this is the step people skip, and it’s the reason some batches end up clumpy. Stir again after 5 minutes to break up any seeds that settled together, then refrigerate for at least 4 hours, or overnight.

The next morning, stir once more and check the consistency. If it’s thicker than you like, loosen it with a splash more milk.

Batching for the week

This recipe scales cleanly — multiply the ingredients by however many days you want to prep, divide into individual jars before refrigerating, and you have grab-and-go breakfasts for up to 5 days (chia pudding holds its texture well; it doesn’t go soggy or separate the way some overnight oats can).

Topping ideas

  • Fresh or frozen berries, added just before eating so they don’t get soggy in the fridge
  • A spoon of nut butter for extra protein and healthy fat
  • Toasted coconut flakes or chopped nuts for texture contrast
  • A layer of plain yogurt for extra protein if the milk you used was lower in protein (like almond milk)
